Try It Out Tuesday The One with a Colonoscopy and a Link Up!

Welcome back to Try It Out Tuesday!    Hayley from Smarty Pants Fashion is back co hosting our Tuesday link up!  I don’t have a lot to share today, I am in for my second colonoscopy in 3 months (that’s what I am doing while you all are relaxing with a cup of coffee and reading this great post and all the great link ups) and I didn’t have a chance to do a lot of cooking over the weekend.  I do have a manicure to share with you, a little darker than last week, as promised!

Cilantro Lime Crock Pot Chicken

Approximately 4 boneless skinless chicken breasts

4-6 Limes

3-4 Cups Bone Broth (enough to cover the breasts about halfway)

1/2 C Chopped Cilantro (more or less depending on taste, I really like cilantro)

Salt/Pepper

2-3 cloves Garlic minced

Layer the breasts in the bottom of your crock pot, mine takes about 4 breasts to cover the bottom.  Squeeze the juice of the limes over the breasts, I used about 4 limes, it depends on your tastes and how much chicken you use.  Cover the breasts with broth, add salt and pepper and garlic. Chop cilantro and add to mixture.

Cook on low 4-6 hours, use a fork to shred chicken.  You can take the breasts out to shred them and then return to the crock pot or shred them right in the crock pot like I did.  Let cook another hour in juices.  This chicken is super for nachos or tacos/enchiladas/burritos, or serve with just black beans and veggies like did. Also, some people like to remove the cilantro before serving, I don’t.

What NOT to try:

Coloring your hair because you think it will make the thinning less noticeable.  Arrrgggg.  I feel like Charlie Brown when Lucy continually pulls the football out from in front of him.  I went into the whole hair color thing thinking I would be thrilled with the outcome.  Instead I have still noticeably thinning hair, maybe more so, with the thinning parts being the only parts that took on color so they are MORE noticeable and all of it feels like straw. I know it’s just hair, but I am feeling sorry for myself this week, I am tired and just frustrated with myself.  Anyway, the moral of the story is you can’t make yourself happy with external changes.
